- 3 cups water
- 1 cup chopped fresh tomatoes or 1 can (8 oz.) whole peeled tomatoes, undrained and chopped
- 1/2 lb. boneless, skinless chicken breasts, cut into 1/2-inch pieces
- 1/2 tsp. dried oregano leaves (optional)
- 1/2 tsp. garlic powder
- 1 cup zucchini, halved lengthwise and sliced
- 1/3 cup shredded vegan mozzarella-style shreds
