Ingredients List
- 1 1/2 Tbsp. vegetable oil
- 1 medium eggplant, diced (about 4 cups)
- 1 medium onion, chopped
- 1 1/2 cups water
- 1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
- 2 Tbsp. chopped fresh parsley leaves (optional)
- Salt and ground black pepper to taste
- Pita chips or thinly sliced Italian or French bread

Email | Print1. In large nonstick skillet, heat oil over medium heat and cook eggplant with onion, stirring occasionally, 3 minutes. Add 1/2 cup water. Reduce heat to low and simmer covered 3 minutes. Stir in Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix blended with remaining 1 cup water. Bring to a boil over high heat. Reduce heat to low and simmer uncovered, stirring occasionally, 20 minutes. Stir in parsley, salt and pepper. Serve with sliced bread.
