Hearty White Bean Soup

  1. 1 Tbsp. vegetable oil
  2. 1 medium onion, chopped
  3. 2 medium carrot, sliced
  4. 2 ribs celery, sliced
  5. 2 cans (19 oz. ea.) cannellini beans or white kidney beans
  6. 1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
  7. 2 cups water
  8. 3 cups coarsely chopped escarole or spinach
  9. 1 medium tomato, diced
  10. 1/4 cup crumbled feta cheese (optional)

1. In large saucepan, heat oil over medium heat and cook onion, carrots, and celery, stirring occasionally, 5 minutes or until tender. Stir in beans and Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix blended with water. Bring to a boil over high heat. Reduce heat to low and simmer 15 minutes or until vegetables are tender. Stir in escarole and tomato and cook 2 minutes or until heated through. Top with cheese.
